  • 2 c. zucchini, cut into matchstick strips
  • 1 c. diagonally sliced carrots
  • 1 c. cooked lima beans (optional)
  • 1 c. halved cherry tomatoes
  • 1/2 c. cauliflowerets
  • 1/2 c. sliced mushrooms
  • 1/4 c. sliced green onion
  • 2 Tbsp. chopped parsley
  • crisp lettuce leaves
  • 1 c. Pepperidge Farm cheese and garlic croutons
  • your favorite dressing
