Vegetable Tuna Pie

  • 1 egg, slightly beaten
  • 1/2 c. mayonnaise
  • 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • dash of ground red pepper
  • 3 Tbsp. chopped onion
  • 3 Tbsp. chopped green pepper
  • 1/2 c. dry bread crumbs
  • 1 (6 1/2 oz.) can lite tuna (undrained)
  • 1 (10 oz.) pkg. frozen mixed vegetables, cooked and drained
  • 1/2 c. (2 oz.) shredded Cheddar cheese, divided

Directions

    Mix egg, mayonnaise, seasonings, onion and pepper.

    Stir in bread crumbs.

    Mix in tuna.

    Press gently in an 8-inch pie plate with back of spoon.

    Shape (like pie crust).

    Toss vegetables with 1/4 cup cheese; put in tuna shell.

    Sprinkle rest of cheese over top.

    Bake at 325° for 20 to 25 minutes.
