Ingredients

  • 1 medium yellow squash
  • 1 medium zucchini
  • 1 medium sweet red pepper
  • 1 1/2 c. sliced fresh mushrooms
  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 6 oz. linguini
  • 1/4 c. dry white wine
  • 1/4 tsp. salt
  • 1/4 tsp. basil
  • 1/4 tsp. tarragon
  • 1/4 tsp. red pepper flakes
  • 1/4 c. grated Parmesan cheese

    Cook linguini per package directions.

    Cut squash and zucchini into 1/4-inch thick slices; then cut slices into thin strips (leave peel on).

    Cut red pepper into thin strips.

    Stir-fry vegetables in olive oil with garlic for 2 to 3 minutes.

    Mix with cooked linguini, wine, salt, basil, tarragon and red pepper.

    Top with grated Parmesan cheese and serve.
