Ingredients

  • 1 red onion, chopped
  • 4 cloves garlic, chopped
  • 1 T chili powder
  • 1 T ground cumin
  • 2 teaspoons unsweetened cocoa powder
  • 1/4 teaspoon ground cinnamon
  • salt and pepper to taste
  • 1 can 28 ounces diced tomatoes, undrained
  • 1 can 15 ounces black beans, rinsed
  • 1 can 15 ounces kidney beans, rinsed
  • 1 can 15 ounces niblet corn, drained
  • 1 can 8-12 ounces tomato sauce
  • 1 medium sweet potato, peeled and cut into 1/2 inch pieces

    1. combine all ingredients in slow cooker adding 1 cup water

    2. cover and cook until sweet potatoes are tender and the chili is thickened, about 8 hours on low setting or 5 hours on high
