- 12 oz. angel hair pasta (uncooked)
- 1/4 c. margarine, softened
- 1 1/2 c. plain nonfat or low-fat yogurt
- 1/2 c. grated Parmesan cheese
- 1/2 c. grated carrot
- 2 Tbsp. fresh parsley, chopped or 1 Tbsp. dry
- additional vegetable flakes or herbs (as desired)
- 1/4 tsp. salt or to taste
- dash of pepper
Directions

1Cook pasta according to package directions (angel hair takes about 4 minutes).

2Drain and rinse.

3Return to same pot.

4Add margarine, tossing until melted.

5Add yogurt, Parmesan cheese, carrot, parsley, salt and pepper.

6Toss until all pasta is coated. Serve hot.
