Veggie Flake Pasta

Ingredients

  • 12 oz. angel hair pasta (uncooked)
  • 1/4 c. margarine, softened
  • 1 1/2 c. plain nonfat or low-fat yogurt
  • 1/2 c. grated Parmesan cheese
  • 1/2 c. grated carrot
  • 2 Tbsp. fresh parsley, chopped or 1 Tbsp. dry
  • additional vegetable flakes or herbs (as desired)
  • 1/4 tsp. salt or to taste
  • dash of pepper

Directions

    Cook pasta according to package directions (angel hair takes about 4 minutes).

    Drain and rinse.

    Return to same pot.

    Add margarine, tossing until melted.

    Add yogurt, Parmesan cheese, carrot, parsley, salt and pepper.

    Toss until all pasta is coated. Serve hot.
