  • 1 kg potato, diced
  • 3 tablespoons cooking oil
  • 1 medium onion, diced
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 3 medium carrots, diced
  • 1 large red pepper, diced
  • 2 stalks celery, diced
  • 1 ear of corn, kernels removed
  • 1 lb tofu, silken firm

Directions

    Heat the oil in a wok.

    Add the onion and cook until translucent.

    Add the potato and fry until just beginning to brown.

    Add in the remaining veggies.

    Stir fry until cooked but firm.

    Crumble the tofu over all and then cook until heated through.
