- 3 tablespoons cooking oil
- 1 medium onion, diced
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 3 medium carrots, diced
- 1 large red pepper, diced
- 2 stalks celery, diced
- 1 ear of corn, kernels removed
- 1 lb tofu, silken firm
Directions

1Heat the oil in a wok.

2Add the onion and cook until translucent.

3Add the potato and fry until just beginning to brown.

4Add in the remaining veggies.

5Stir fry until cooked but firm.

6Crumble the tofu over all and then cook until heated through.
