- 1 c. sugar
- 2 Tbsp. flour
- 2 Tbsp. cider vinegar
- 2 eggs, beaten
- 1 Tbsp. butter
- 1/2 tsp. lemon extract
- sweetened whipped cream
Directions

1Bake pie shell; cool.

2Mix sugar and flour in 2-quart saucepan. Add enough water to vinegar to measure 1 cup.

3Blend into eggs. Stir egg mixture gradually into sugar mixture.

4Cook over medium heat, stirring constantly until mixture thickens and boils.

5Boil and stir 1 minute.

6Remove from heat; stir in butter and lemon extract.

7Cool slightly.

8Pour into pie shell; refrigerate.

9Serve with whipped cream.
