- 2 1/2 cups ground walnuts
- 3/4 cup sugar
- 7 egg whites
- 3 egg yolks
- 3 tablespoons strong coffee
- 1/2 cup sugar, plus 1 tablespoon
- 1/2 cup chopped walnuts
- Confectioners' sugar
Directions

1Preheat oven to 400.

2Mix together walnuts and three-fourths cup sugar.

3Beat egg whites until stiff and fold in walnut mixture.

4Divide into three round eight- or nine-inch cake tins that have been well buttered and floured.

5Bake 15 to 20 minutes, until delicately browned.

6Cool in tins.

7Mix egg yolks, coffee and one-half cup sugar and heat over low flame, stirring briskly until thick and creamy.

8(Do not boil.)

9Cool.

10Stir chopped walnuts and remaining one tablespoon sugar over low heat until browned.

11Add to coffee and egg mixture.

12Spread filling between layers.

13Sprinkle top with confectioners' sugar.
