  • 3 Tbsp. oil
  • 1 onion, chopped
  • 1 (24 oz.) bag frozen corn (about 4 1/2 c.)
  • 1/2 tsp. ground cumin
  • grated zest of 1 lime
  • juice of 2 limes
  • 1/4 tsp. salt
  • 1 (4 oz.) jar sliced pimentos, drained well

Directions

    In a medium pot, heat oil over medium-high heat.

    Add onion; cook stirring occasionally until very tender, about 10 minutes. Stir in corn, cumin, lime zest and juice, salt and pimentos. Cover and cook until heated through, about 10 minutes.
