- 1 medium size watermelon
- 7 c. sugar
- 1 pt. vinegar
- 1/2 tsp. oil of cloves
- 1/2 tsp. oil of cinnamon
Directions

1Cut melon in 1-inch slices.

2Remove all green skin.

3Remove all red part, leave only pale pink.

4Cut strips into 1/2-inch pieces.

5Pour boiling water over pieces.

6Let stand overnight. Then drain and cover with fresh water.

7Cook until barely tender. Make a syrup of remaining ingredients and bring to a boil.

8Pour over melon strips and let stand overnight.

9Next day, drain again. Reheat drained syrup and pour over melon again.

10Let stand another night.

11On third morning, drain off syrup.

12Pack in sterilized jars, reheat syrup again.

13Pour over melon in jars and seal.
