  • 10 lb. prepared watermelon rind
  • 10 lb. sugar
  • 1 qt. white vinegar
  • 3/4 tsp. (40 drops) oil of cloves
  • 3/4 tsp. (40 drops) oil of cinnamon

    Cover watermelon rind with cold water and set in refrigerator overnight.

    Put in boiling water and cook until clear (about 10 minutes); drain.
