- 2 c. yellow corn meal
- 1 3/4 c. all-purpose flour
- 1 1/4 c. toasted wheat germ
- 1/2 c. sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 2 c. buttermilk
- 1/2 c. oil
- 2 eggs, slightly beaten
Directions

1About 2 hours before serving or early in the day:

2Preheat oven to 375°.

3Grease well a 9 x 5-inch loaf pan.

4In a large bowl, with a fork, beat buttermilk, oil and eggs.

5In another bowl, combine dry ingredients.

6Stir egg mixture into flour mixture, just until flour is moistened.

7(Batter will be lumpy, not smooth.)

8Quickly pour into loaf pan, spreading evenly.

9Bake 1 hour and 10 minutes or until toothpick inserted in center comes out clean.

10Cool bread in pan on wire rack 10 minutes.

11Remove from pan.

12Serve warm or cool bread completely on wire rack to serve later.

13Makes 1 loaf.
