Ingredients

  • 3 cups pork rinds
  • 2 large eggs
  • 4 tablespoons butter, melted and slightly cooled
  • 12 chicken wings, cut in half at joints, wing tips removed and discarded

Directions

  1. 1
    Preheat the oven to 400F.
  2. 2
Cover a rimmed baking sheet with foil and spray the foil with nonstick cooking spray.
  3. 3
Place the pork rinds in a heavy plastic bag and seal.
  4. 4
Roll with a rolling pin or crush the bag with your hands until the rinds become coarse crumbs (do not crush them too finely).
  5. 5
Lightly beat the eggs into the melted butter.
  6. 6
Place the crushed pork rinds on a plate.
  7. 7
Dip the wings into the egg-butter mixture and let the excess drip off.
  8. 8
Roll the wings in the crushed pork rinds, pressing lightly to help them adhere to the meat, and place the wings on the baking sheet.
  9. 9
Roast for 30 minutes or until done.
  10. 10
    Serve warm.
