White Bean Soup

  • 3 (1/4-inch) slices ham
  • 2 Tbsp. butter
  • 1 medium onion, diced
  • 3 (8 oz.) containers light cream
  • 2 c. water
  • 2 large chicken bouillon cubes
  • 2 (16 oz.) cans Great Northern white beans
  • 1 dash black pepper

Directions

    Cube slices of ham and onion and saute in melted butter. Add cream, water, beans, chicken bouillon and pepper; bring to a boil. Lower heat to simmer and cook 1 hour. Stir occasionally. Mash the beans in the soup. Cook another 20 minutes and serve.
