- 1 pkg. active dry yeast or 1 cake compressed yeast
- 1/4 c. water
- 2 c. milk, scalded
- 2 Tbsp. sugar
- 2 tsp. salt
- 1 Tbsp. shortening
- 6 to 6 1/4 c. flour
Directions

1Soften active dry yeast in warm water (110°) or compressed yeast in lukewarm water (85°).

2Combine hot water, sugar, salt and shortening.

3Cool to lukewarm.

4Stir in 2 cups flour; beat well and add the softened yeast.

5Mix and add enough of the remaining flour to make a moderately stiff dough.

6Knead dough until smooth and satiny (about 8 to 10 minutes).

7Shape into ball; place in lightly greased bowl, turning once to grease surface.

8Cover and let rise in warm place until double (about 1 1/2 hours).
