  • 2 lb. (4 to 5) chicken breasts (leave skin on)
  • 1 lb. dried Great Northern white beans
  • 1 Tbsp. olive oil
  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 2 (4 oz.) cans mild green chilies, chopped
  • 2 tsp. ground cumin
  • 1 1/2 tsp. oregano, crumbled
  • 1/4 tsp. cloves
  • 1/4 tsp. red cayenne pepper
  • 3 c. Monterey Jack cheese, shredded
  • 6 c. chicken stock

    Boil chicken breasts (season to taste with bouillon, salt and pepper) in enough water to have 6 cups stock. Measure 6 cups stock; set chicken breasts aside to cool.
