White Fruit Cake

- 1 lb. butter
- 1 lb. sugar
- 1 lb. flour
- 1 lb. candied cherries (each red and green)
- 2 oz. lemon extract
- 6 eggs
- 1 lb. chopped pecans
- 1 lb. candied pineapple, chopped or cut small
Directions

1Cream sugar and butter.

2Beat in egg yolks.

3Mix fruit and nuts.

4Sprinkle half of flour over fruits and nuts (mix).

5Mix with butter and sugar.

6Add rest of flour.

7Beat egg whites separately and fold into cake mixture.

8Add extract.

9Bake in greased and wax paper lined pan.

10I use my hands to mix all of this after I cream butter, sugar and eggs.

11Makes 2 large or 3 small loaf pans.

12Bake at 300° for 2 hours or until toothpick comes out clean.
