  • 2 c. whole grain or multigrain pancake mix
  • 1 c. whole milk
  • 1 large egg
  • 1/4 c. butter
  • 1 c. pitted prunes

    Preheat oven to 375 degrees F. Line 12-cup muffin pan with paper liners.

    In large bowl, whisk 2 cups whole grain or multigrain pancake mix, 1 cup whole milk, and 1 large egg until blended.

    Whisk in 1/4 cup butter, melted, and then prunes, finely chopped, just until combined.

    Divide batter among muffin cups.
