- 1 tablespoon margarine or 1 tablespoon butter
- 1 small green pepper, chopped
- 1 small red pepper, chopped
- 1 medium onion, chopped
- 6 eggs, beaten
- 14 cup milk
- 1 cup cooked wild rice
- 1 cup shredded swiss cheese, divided
Directions

1Melt margarine in 10-inch nonstick skillet over medium heat.

2Cook peppers and onion in margarine, stirring frequently, until vegetables are crisp-tender.

3Mix eggs, milk, wild rice and 1/2 cup of the cheese.

4Pour egg mixture over vegetables; reduce heat.

5Cover and cook 15-20 minutes or until eggs are set; remove from heat.

6Sprinkle with remaining 1/2 cup cheese.

7Cover and let stand 5 minutes or until cheese is melted.

8Serve immediately.
