Wild Rice Side Dish

- 1 c. wild rice (6 oz.)
- 4 c. water
- 3 to 4 chicken bouillon cubes
- 1/2 c. butter or margarine
- 1/2 c. chopped onions
- 1/2 c. sliced celery (across grain)
- 1 c. fresh sliced mushrooms (domestic, exotic or wild)
Directions

1Rinse rice thoroughly in a strainer.

2Combine wild rice, water and chicken bouillon cubes in a heavy 3-quart saucepan.

3Bring to boil.

4Reduce heat to low boil; cover loosely and cook 45 to 60 minutes, or until rice has puffed and most of liquid has absorbed. Remove from heat.

5Fluff rice with fork; cover tightly and let stand for 5 minutes.

6Drain off excess water.

7In separate pan, melt butter and saute onion, celery and mushrooms.

8Combine cooked rice with saute mix.

9Salt or spice to taste.
