- 4 egg yolks
- 4 Tbsp. hot water
- 1/2 tsp. salt
- dash of pepper
- 4 egg whites
Directions

1Beat egg yolks until thick and lemon colored.

2Add hot water, salt and pepper.

3Beat egg whites until stiff.

4Cut and fold the whites into the yolks until mixture is well blended.

5Butter the sides and bottom of your pan.

6Spoon the omelet mixture into the pan evenly.

7When well puffed and brown, put the pan in a 375° oven to finish cooking the top.

8May sprinkle with grated cheese.
