Wilted Spinach Salad

- 1/2 lb. spinach
- 4 slices bacon
- 1 small white onion, finely minced
- 2 tsp. salt
- 1 tsp. pepper
- 6 Tbsp. white vinegar
Directions

1Cut stems off spinach; wash leaves well.

2Drain in colander. Chop spinach.

3Cook bacon until browned and crisp; remove.

4Drain on paper towels and crumble.

5Add bacon, minced onion, salt and pepper to spinach.

6Add vinegar to bacon fat; bring to a boil. Stir and pour over the spinach.

7Serve immediately while spinach is still crisp. Yield: 4 servings.
