  • 2 c. flour
  • 2 c. yellow corn meal
  • 2 1/2 Tbsp. baking powder
  • 2 tsp. salt
  • 1/3 c. salad oil
  • 4 eggs
  • 3/4 c. milk
  • 2 2/3 c. mashed, cooked or canned yams

Directions

    Mix flour, corn meal, baking powder and salt.

    Set aside. Combine eggs, milk and oil in large bowl.

    Beat until smooth.

    Add yams; beat until well blended.

    Add dry mixture, stirring only until moistened.

    Pour into 9 x 13-inch greased baking pan.

    Bake at 425° for 35 to 40 minutes.

    Serve warm with butter.
