- 2 c. flour
- 2 c. yellow corn meal
- 2 1/2 Tbsp. baking powder
- 2 tsp. salt
- 1/3 c. salad oil
- 4 eggs
- 3/4 c. milk
- 2 2/3 c. mashed, cooked or canned yams
Directions

1Mix flour, corn meal, baking powder and salt.

2Set aside. Combine eggs, milk and oil in large bowl.

3Beat until smooth.

4Add yams; beat until well blended.

5Add dry mixture, stirring only until moistened.

6Pour into 9 x 13-inch greased baking pan.

7Bake at 425° for 35 to 40 minutes.

8Serve warm with butter.
