Yellow Split Peas With Leeks

  • 2 teaspoons olive oil
  • 4 leeks, chopped (white part only)
  • 3 garlic cloves, finely chopped
  • 2 cups water
  • 1 cup yellow split peas, uncooked
  • 1 teaspoon dried basil
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 1 cup orange juice

    Heat oil in a medium saucepan over medium heat.

    Add leask, and garlic.

    Cook, stirring frequently, 3 minutes.

    Add small amount of water if necessary, about a tablespoon at a time, to prevent sticking.

    Add remaining ingredients, except orange juice.

    Bring mixture to a boil stirring occasionally, then reduce heat to medium-low, cover and cook 30 minutes.

    Stir in orange juice into saucepan.

    When mixture boils again, cover and continue to cook, 15 minutes more.

    Serve over rice, couscous, or any cooked grain.
