- 2 teaspoons olive oil
- 4 leeks, chopped (white part only)
- 3 garlic cloves, finely chopped
- 2 cups water
- 1 cup yellow split peas, uncooked
- 1 teaspoon dried basil
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 cup orange juice
Directions

1Heat oil in a medium saucepan over medium heat.

2Add leask, and garlic.

3Cook, stirring frequently, 3 minutes.

4Add small amount of water if necessary, about a tablespoon at a time, to prevent sticking.

5Add remaining ingredients, except orange juice.

6Bring mixture to a boil stirring occasionally, then reduce heat to medium-low, cover and cook 30 minutes.

7Stir in orange juice into saucepan.

8When mixture boils again, cover and continue to cook, 15 minutes more.

9Serve over rice, couscous, or any cooked grain.
