  • 1 lb salmon fillet
  • 1 pinch oregano
  • salt and pepper
  • 1 tablespoon olive oil
  • 12 red onion, minced
  • 1 teaspoon diced garlic
  • 14 cup diced carrot
  • 1 pinch brown sugar
  • 12 cup chicken broth
  • 1 lemon, juice and zest of
  • 3 -4 peppercorns
  • 12 cup white wine
  • 1 tablespoon capers

Directions

    Season fillet with oregano, salt and pepper.

    Heat oil in a large pan; saute onions, garlic and carrots for 3 minutes over medium high heat; sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes.

    De-glaze with chicken broth, lemon juice and rind and white wine.

    Place peppercorns, salmon on top cover and simmer over low flame for 7 minutes.

    Top with capers and serve.
