- 3 tsp. olive oil
- 4 cloves garlic, peeled and minced
- 16 c. spinach leaves, stemmed, washed and torn
- 4 tsp. fresh lemon juice
- 1 tsp. salt
- freshly ground pepper to taste
Directions

1Heat 1 teaspoon of oil in a large skillet.

2Add garlic and cook, stirring constantly for 20 seconds.

3Add spinach by handfuls, tossing the leaves in the skillet until all of it fits. Cook, stirring, for about 2 minutes.

4Remove from heat and toss in the remaining oil and lemon juice, salt and pepper.

5Divide among 4 plates and serve.

6Yields 4 servings.
