Yvonne'S Spinach With Garlic And Lemon

  • 3 tsp. olive oil
  • 4 cloves garlic, peeled and minced
  • 16 c. spinach leaves, stemmed, washed and torn
  • 4 tsp. fresh lemon juice
  • 1 tsp. salt
  • freshly ground pepper to taste

Directions

    Heat 1 teaspoon of oil in a large skillet.

    Add garlic and cook, stirring constantly for 20 seconds.

    Add spinach by handfuls, tossing the leaves in the skillet until all of it fits. Cook, stirring, for about 2 minutes.

    Remove from heat and toss in the remaining oil and lemon juice, salt and pepper.
  5. 5
    Divide among 4 plates and serve.

    Yields 4 servings.
