  • 12 lb mushroom (button or crimini, whole)
  • 1 (340 g) package baby carrots
  • 1 medium onion, peeled, cut into 1/2 inch-think wedges
  • 1 large bell pepper, cut into 8 strips (red, yellow or green)
  • 13 cup zesty Italian dressing
  • 13 cup parmesan cheese, grated, divided

    Preheat oven to 450F Line a 15x10x1-inch baking pan with foil; spray with cooking spray.

    Toss vegetables with dressing and 1/4 cup of the cheese; spread into prepared pan.

    Bake 28-30 minutes or until vegetables are tender, stirring after 15 minutes.
