- 1/2 c. rice
- 1 onion
- 2 lb. zucchini (8 small)
- 2 cloves garlic
- 2 oz. Swiss cheese (about 1/2 c. grated)
- 1 Tbsp. olive oil
- 2 eggs
- 2 Tbsp. grated Parmesan cheese
- 1/2 c. chopped fresh parsley
- 1/2 tsp. dried thyme
- salt to taste
- pepper to taste
Directions

1Heat oven to 375°.

2Oil a loaf pan or 1 1/2-quart casserole. Cook rice in plenty of boiling, salted water 10 to 15 minutes and drain.

3Chop onion and zucchini.

4Mince garlic.

5Heat the oil in a large frying pan and cook onion over medium-low heat until soft. Add zucchini and garlic and cook over low heat for 10 minutes.
