  • 4 c. chopped zucchini
  • 1 c. chopped onion
  • 1/4 to 1/2 c. margarine
  • 2 eggs
  • 2 c. grated Mozzarella cheese
  • 1 pkg. crescent rolls
  • 1/2 tsp. garlic salt
  • 1/4 tsp. oregano
  • 1/4 tsp. pepper
  • 1/2 c. chopped parsley
  • 1/2 tsp. mustard

    Brown zucchini and onion in margarine.

    Cook 10 minutes.

    Add parsley and spices.

    Beat eggs in a large bowl and add cheese to egg mixture.

    Add zucchini mix.

    Line 13 x 9-inch baking dish with rolls.

    Spread on mustard.

    Pour in zucchini mixture and cook 20 minutes at 375°.
