- 2 medium zucchini, sliced 1/8-inch
- 1 c. fresh mushrooms, sliced 1/4-inch
- 1 medium onion, sliced or chopped
- 1/4 c. parsley, chopped
- 3 Tbsp. butter or margarine
- 3 Tbsp. all-purpose flour
- 10 3/4 oz. chicken broth
- 3/4 c. whipping cream
- pinch of pepper
Directions

1In 3-quart saucepan, melt 2 tablespoons of butter.

2Add zucchini, mushrooms, onion and parsley.

3Cook over medium heat until vegetables are crispy-tender (6 to 8 minutes).
