  • 3 eggs
  • 3/4 c. oil
  • 3 c. flour (not self-rising)
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 c. brown sugar
  • 1 c. sugar
  • 1 Tbsp. vanilla
  • 2 c. grated zucchini
  • 1/2 c. raisins
  • 1/2 c. nuts (optional)

Directions

    Beat eggs until frothy.

    Add sugar and beat until creamy.

    Add oil and vanilla.

    Blend in dry ingredients and zucchini.

    Beat until well mixed.

    Fold in raisins and nuts; pour into 2 greased and floured loaf pans.

    Bake at 350° for 1 hour or until toothpick comes out clean.

    The bread can be frozen and is also good if spread with butter and cream cheese.
