Ingredients

  • 3 eggs
  • 1 c. oil
  • 1 c. brown sugar
  • 1 c. granulated sugar
  • 2 c. coarsely grated zucchini
  • 3 c. sifted flour (can substitute 1 c. whole wheat)
  • 1/4 tsp. baking powder
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 to 3 tsp. cinnamon
  • pinch of nutmeg
  • 1 Tbsp. vanilla
  • 1/2 to 1 c. chopped nuts (optional)
  • 1/2 c. raisins (optional)

Directions

    Beat eggs, sugars, oil and zucchini.

    Add dry ingredients; mix well. Add vanilla and nuts.

    Pour into 2 greased and lightly floured pans.

    Bake at 350° for 40 minutes. Test for doneness with a toothpick. Stores well in freezer for several months.
