Zucchini Cake

Ingredients

  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. oil (Crisco)
  • 2 c. grated zucchini, drained
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 c. chopped nuts (more or less to taste)
  • 1/2 to 1 c. chopped maraschino cherries or raisins

Directions

    Beat eggs until fluffy.

    Add sugar, vanilla, oil, pineapple and grated zucchini.

    Mix well.

    Add flour, soda, salt, baking powder and cinnamon.

    Mix well.

    Add nuts, cherries or raisins; mix together.

    Grease and flour 2 loaf pans.

    Bake in a 325° oven for 1 hour or until golden brown. Grate zucchini skins, insides and seeds all together.

    Spoon out excess seeds.
