Zucchini Cake

Ingredients: 1/2 c. oleo; 1/2 c. oil; 1 3/4 c. sugar; 2 eggs; 1 tsp. vanilla; 1/2 c. milk (can sour with 1 tsp. vinegar); 2 1/2 c. flour; 4 Tbsp. cocoa; 1/2 tsp. baking powder; 1 tsp. baking soda; 2 c. grated zucchini; 3/4 c. chocolate chips; 3/4 c. chopped nuts (optional)

1/2 c. oleo
1/2 c. oil
1 3/4 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. milk (can sour with 1 tsp. vinegar)
2 1/2 c. flour
4 Tbsp. cocoa
1/2 tsp. baking powder
1 tsp. baking soda
2 c. grated zucchini
3/4 c. chocolate chips
3/4 c. chopped nuts (optional)

Directions

Cream oleo, oil and sugar.

Add eggs, vanilla and milk.

Blend well.

Mix dry ingredients together; add to creamed mixture.

Stir in zucchini.

Sprinkle with nuts and chips, after pouring batter into greased and floured 9 x 13-inch pan.

Bake at 325° for 55 minutes.

(No need for frosting; zucchini makes cake moist, too.)
