  • 1/2 c. butter or oleo, softened
  • 1 c. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 2 c. shredded zucchini
  • 2 Tbsp. grated orange peel, divided
  • 1/2 c. plus 2 Tbsp. orange juice, divided
  • 2 1/4 c. flour
  • 1 Tbsp. baking powder
  • 1 tsp. ginger
  • 3 Tbsp. powdered sugar

    Cream the butter and sugar.

    Beat in eggs and vanilla.

    Stir in zucchini and 1 tablespoon grated orange peel. Stir dry ingredients together.

    Alternately stir in the flour mixture with 1/2 cup orange juice until blended.

    Bake at 350° for 55 to 65 minutes or until a toothpick comes out clean.
