- 3 c. shredded unpared zucchini, drained
- 1/2 c. shredded Cheddar cheese
- 3 Tbsp. snipped parsley
- 1 large clove garlic, finely chopped
- 1 egg
- 1 tsp. salt
- dash of pepper
- 1 c. Bisquick mix
Directions

1Heat oil in 10-inch skillet.

2Mix zucchini, cheese, parsley, egg, salt and pepper; stir in baking mix.

3Drop by rounded tablespoon into hot oil.

4Fry until golden brown, about 1 minute on each side; drain.

5Makes about 2 dozen cakes.
