Zucchini Casserole

Ingredients

  • 2 lb. sliced zucchini, peeled
  • 1 chopped onion
  • 1 c. grated carrots
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 1 box chicken Stove Top stuffing mix
  • 1/2 c. melted butter or margarine

Directions

    Cook first 3 ingredients in water.

    Boil five minutes.

    Drain. Add next 2 items and stir well.

    Mix seasoning packet with margarine and add bread crumbs.

    Mix well.

    Put 1/2 of mixture (crumb) in 1 1/2-quart casserole.

    Then put zucchini mixture on top.

    Lastly, put other half of crumbs and bake at 350° for 45 minutes.
