  • 1 zucchini, washed
  • 1 egg, beaten
  • 1 c. mushrooms (canned)
  • 6 oz. tomato juice
  • 1/4 tsp. garlic powder
  • pepper to taste
  • 1/4 tsp. parsley flakes
  • 1 tsp. onion flakes
  • 1 tsp. celery flakes or 1/2 c. celery, chopped
  • 1 oz. Mozzarella cheese or Parmesan cheese

Directions

    Cut zucchini in cubes; cook it with mushrooms until tender. Add egg.

    Stir in tomato juice and rest of seasonings.

    Put in greased casserole.

    Top with the cheese.

    Bake at 350° for 30 minutes.
