- 3 Tbsp. butter
- 3 Tbsp. flour
- 3 large tomatoes or 2 c. canned, drained
- 1 stalk celery, diced
- 1 green pepper, cut fine
- 1 onion, diced
- salt to taste
- 1 Tbsp. brown sugar
- 1 bay leaf
- 1 c. grated cheese
- 1 c. fine bread crumbs
- 1 large squash
Directions

1Tomatoes should be peeled and diced if using fresh ones.

2Add all ingredients, except squash, to butter and cook 5 minutes. Cube the large squash and put in a baking dish.

3Pour tomato mixture over squash.

4Cover with grated cheese and bread crumbs. Sprinkle with water and dot with butter.

5Bake at 350° for 45 to 60 minutes.
