Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 3 large tomatoes or 2 c. canned, drained
  • 1 stalk celery, diced
  • 1 green pepper, cut fine
  • 1 onion, diced
  • salt to taste
  • 1 Tbsp. brown sugar
  • 1 bay leaf
  • 1 c. grated cheese
  • 1 c. fine bread crumbs
  • 1 large squash

Directions

    Tomatoes should be peeled and diced if using fresh ones.

    Add all ingredients, except squash, to butter and cook 5 minutes. Cube the large squash and put in a baking dish.

    Pour tomato mixture over squash.

    Cover with grated cheese and bread crumbs. Sprinkle with water and dot with butter.

    Bake at 350° for 45 to 60 minutes.
