  • 1 1/2 c. cooked (microwave) zucchini, drained well
  • 2 large eggs
  • 3/4 c. sugar
  • 1 can evaporated milk
  • 1 heaping Tbsp. cornstarch
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Directions

    Blend all in blender and pour in pie shell.

    Bake 15 minutes at 400° and then 25 minutes at 350°.
