Zucchini Jack Casserole

  • 2 lb. zucchini
  • 4 eggs
  • 1/2 c. milk
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 3 Tbsp. flour
  • 1/4 c. chopped parsley
  • 1 clove garlic, pressed
  • 1 small onion, chopped
  • 1 (7 oz.) can green chilies
  • 3/4 lb. Monterey Jack cheese, shredded
  • 1 c. seasoned croutons
  • 3 Tbsp. margarine, melted

Directions

    Slice zucchini crosswise 1/4-inch thick.

    In a large bowl, beat together eggs, milk, salt, baking powder and flour until smooth.

    Stir in parsley, garlic, onion, green chilies, cheese and zucchini.

    Spoon into a greased 9 x 13-inch baking pan.

    Toss croutons in melted margarine and sprinkle on top.

    Bake, uncovered, 35 to 40 minutes at 350° or until squash is tender when pierced.

    Let stand 10 minutes before serving.
