- 6 c. sliced zucchini
- 1/2 lb. ground beef
- 1 clove garlic, chopped
- 1 (8 oz.) can tomato sauce
- 1 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1 c. Ricotta cheese
- 1 egg, beaten
- 1 tsp. parsley
- 1/4 c. bread crumbs
- 1 c. Mozzarella, shredded
Directions

1Cook zucchini in boiling salt water for 5 minutes.

2Cook beef and garlic, stir in spices and sauce.

3Mix Ricotta, egg and parsley.

4Place 1/2 zucchini in greased 8-inch square baking pan. Sprinkle with bread crumbs.

5Spread 1/2 of Ricotta, 1/2 of beef mixture and 1/2 of Mozzarella.

6Repeat.

7Bake at 350° for 25 to 30 minutes.

8Yields 5 to 6 servings.
