- 1 qt. spaghetti sauce
- 4 eggs, lightly beaten
- 1/2 tsp. oregano
- salt and pepper
- 1 c. Parmesan or Romano cheese
- 1 c. bread crumbs
- 2 lb. Ricotta cheese
- 2 Tbsp. chopped parsley
- 1/2 tsp. basil
- 1 lb. Mozzarella, grated
Directions

1Scrub and trim zucchini, then cut into long thin slices. Bring 1-inch water to boil in a large pot.

2Add 1 teaspoon salt. Cook zucchini about 5 minutes.
