Zucchini Pepperoni Casserole

- 4 c. zucchini, chopped
- 1/2 c. onion, chopped
- 2 c. Mozzarella cheese, shredded
- 2 Tbsp. Parmesan cheese
- 3/4 c. pepperoni (small chunks)
- 1/4 c. oil
- 4 eggs, slightly beaten
- 1 c. Bisquick
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. basil
- 1/2 tsp. oregano
Directions

1Preheat oven to 350°.

2Spray 9 x 13-inch pan with no-stick spray.

3Combine zucchini, onion, cheeses, pepperoni and spices in a large bowl.

4In another bowl combine eggs, oil and Bisquick. Add to zucchini mixture and stir well until all ingredients are coated.

5Spread in prepared baking dish.

6Bake 35 to 40 minutes, or until lightly browned.

7Serve with marinara sauce or spaghetti sauce on the side.
