  • 2 eggs, beaten
  • 4 to 5 medium zucchini, sliced thin
  • 1/4 to 1/2 c. chopped onion
  • crescent roll dough
  • 1/4 c. parsley flakes
  • mustard
  • 8 oz. Swiss cheese, shredded (use more)
  • garlic powder
  • oregano
  • pepper

Directions

    Cook sliced zucchini, chopped onion, parsley and spices together (use big frying pan); really cooks down.

    Drain.

    Mix eggs and cheese together.

    Spread crescent roll dough in pie plate. Spread yellow mustard over dough.

    Mix zucchini mixture, egg and cheese mixture; put in pie crust and bake at 325° for 25 to 30 minutes.
