  • 3 c. refrigerated loose pack hash brown potatoes
  • 1 egg, beaten
  • 1/4 c. finely chopped onion
  • 1/4 c. Parmesan cheese
  • 2 medium zucchini (2 1/2 c.), thinly sliced
  • 1 Tbsp. margarine
  • 2 eggs, beaten
  • 1 c. Cheddar or Swiss cheese
  • 1/2 c. milk
  • 1/2 tsp. oregano
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

    In a bowl combine hash browns, onion, Parmesan cheese and 1 egg.

    Put into a 9-inch pie pan, or 10-inch quiche dish.

    Pat the mixture in the bottom and up the sides.

    Bake at 400° for 35 minutes.

    In large skillet cook zucchini in margarine until crisp-tender.

    Arrange on the potato crust.

    In small bowl combine 2 eggs, cheese, milk, oregano, salt and pepper.

    Pour over zucchini.

    Bake 25 to 30 minutes at 350°.
