  • 4 whole Large Eggs Or 1 Cup Egg Substitute
  • 1 cup Buttermilk Baking Mix, Regular Or Reduced Fat
  • 1/2 cups Vegetable Oil
  • 3/4 cups Grated Parmesan Cheese
  • 2 Tablespoons Chopped Fresh Parsley
  • 2 teaspoons Dried Italian Seasoning
  • 1/2 teaspoons Black Pepper
  • 2 cloves Garlic, Finely Minced
  • 1/2 cups Finely Chopped Onion
  • 3 cups Finely Chopped Unpeeled Zucchini

Directions

    Preheat the oven to 350 degrees F.

    Beat the eggs in a large bowl.

    Add the baking mix, oil, Parmesan, parsley, Italian seasoning, pepper and garlic, stirring to mix well.

    Stir in the onion and zucchini.

    Spread the mixture in a greased 9 pie plate.

    Bake at 350 degrees F for 45 minutes or until a toothpick inserted in the center comes out clean.

    Let the pie stand for 10 minutes before slicing.

    Makes 6-8 servings.

    Note: This pie is delicious hot or cold.
