- 4 whole Large Eggs Or 1 Cup Egg Substitute
- 1 cup Buttermilk Baking Mix, Regular Or Reduced Fat
- 1/2 cups Vegetable Oil
- 3/4 cups Grated Parmesan Cheese
- 2 Tablespoons Chopped Fresh Parsley
- 2 teaspoons Dried Italian Seasoning
- 1/2 teaspoons Black Pepper
- 2 cloves Garlic, Finely Minced
- 1/2 cups Finely Chopped Onion
- 3 cups Finely Chopped Unpeeled Zucchini
Directions

1Preheat the oven to 350 degrees F.

2Beat the eggs in a large bowl.

3Add the baking mix, oil, Parmesan, parsley, Italian seasoning, pepper and garlic, stirring to mix well.

4Stir in the onion and zucchini.

5Spread the mixture in a greased 9 pie plate.

6Bake at 350 degrees F for 45 minutes or until a toothpick inserted in the center comes out clean.

7Let the pie stand for 10 minutes before slicing.

8Makes 6-8 servings.

9Note: This pie is delicious hot or cold.
