  • 2 c. cooked zucchini
  • 1 1/2 c. brown or white sugar
  • 3 eggs, well beaten
  • 1/3 c. all-purpose flour
  • 1 tsp. vanilla
  • 1 tsp. pumpkin pie spice
  • 1 unbaked pie shell (9-inch)
  • 1/2 c. flaked coconut

Directions

    Cook zucchini in boiling water until tender.

    Drain.

    Place zucchini in blender for 1 minute.

    In large bowl, mix all other ingredients; mix well.

    Now add zucchini to that mix and pour in pan.

    Sprinkle with coconut.

    Bake at 350° for 25 to 30 minutes or until coconut is brown.
