Zucchini Pineapple Bread

  • 3 eggs, beaten
  • 2 cups sugar
  • 1 cup oil
  • 3 tsp. vanilla
  • 2 cups zucchini, grated
  • 3 cups flour
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 cup chopped pecans
  • 1 can (8 oz.) crushed pineapple, drained
  • Cream Cheese

Directions

    Mix eggs, sugar, oil and vanilla and beat well.

    Add remaining ingredients except cream cheese; mix and pour into 2 greased and floured loaf pans.

    Bake at 325 for 1 hour.

    Test with a toothpick.

    Cool.

    To serve, slice and spread slices with cream cheese.
