- 3 eggs, beaten
- 2 cups sugar
- 1 cup oil
- 3 tsp. vanilla
- 2 cups zucchini, grated
- 3 cups flour
- 1 tsp. baking soda
- 3 tsp. cinnamon
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 cup chopped pecans
- 1 can (8 oz.) crushed pineapple, drained
- Cream Cheese
Directions

1Mix eggs, sugar, oil and vanilla and beat well.

2Add remaining ingredients except cream cheese; mix and pour into 2 greased and floured loaf pans.

3Bake at 325 for 1 hour.

4Test with a toothpick.

5Cool.

6To serve, slice and spread slices with cream cheese.
