- 3 medium tomatoes, sliced
- 2 medium zucchini, sliced
- 1/4 c. olive oil
- 1/4 c. chopped parsley
- 2 tsp. chopped shallots
- 1/2 clove garlic
- 1/4 tsp. basil
- 1/4 tsp. thyme
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

1Preheat oven to 375°.

2Arrange tomatoes and zucchini in rows in a 13 x 9-inch baking dish.

3In a small bowl, combine oil, parsley, shallots, garlic, basil, thyme, salt and pepper.

4Pour over vegetables.

5Bake for 30 minutes, basting occasionally with the liquid in the pan.
